ah, the corned beef




So what did you guys do with the corned beef? I am a newby to the corned beef and cabbage tradition (and I do admit, I was not fond of the aroma it brought into my home). So when I took the beef I'd been simmering in my crockpot for a good eight hours I was horrified to see that it was red! So, then I fried it. And seeing that it still retained a vibrant color, we decided to eat it. Even Britton added a bit of ketchup and partook.

But I decided that I didn't want to deal with slimy soggy boiled cabbage, that's the tradition, right? Do any of you other great cooks do something else with your cabbage? I decided to be decidedly American, and make a new tradition out of something traditional, and I fried the cabbage, too. It ended up tasting a lot like the inside of a spring roll, and the entire family ate that, too. Lucy loved the cabbage. I know I shouldn't be admitting to giving my baby fried foods, but it is a nutritious vegetable, right?

Well, now that you are all enthralled to hear about our delicious St. Patty's day feast, I feel compelled to share that corned beef is even better as shephard's pie! Oh yes! Wednesday's are a busy day for us, so I thought a casserole with leftover corned beef was just the thing. I had some reservations about using leftover corned beef, with its strong flavor and pungent aroma, but add some brown gravy and peas and carrots and top it all off with magic potatoes and lots of cheese, and it was fabulous! Hope you all enjoyed your corned beef and cabbage, and give me some ideas for next year!

That is such a good picture of you guys. That was a smart idea to fry the corn beef and cabbage, I'll have to try it sometime.

Beth, you are so cute! You know, the corned beef is totally supposed to be red, right? I love corned beef, but I was too busy this year. We had giant Costco muffins for dinner instead. Lame, I know.

You crack me up:) Corned beef is still red after you cook it. My cabbage was a little soggy too. You aren't supposed to add the cabbage until later. I think the meat tastes better if you rinse it first to get some of the salt off. Even then, it is very salty. I only like it once a year. Rachel really liked it and even eats it cold in her lunch at school.

Oh, I didn't make that for St. Patty's day. But I wish I would have. My mom always had that. I loved the cabbage more than anything.
