new crazy project

These days I really am generally barefoot in the kitchen.

So I've made myself a new challenge: Feeding a family of four for forty dollars a week.

Oh yeah, and we've gotten pretty creative with it.

Take this week for example:

Sunday: Whole roasted lemon oregano chicken and pesto potato wedges (compliments of William-Sonoma. Who said we can't eat like kings on a shoestring?)

Monday: Chicken Chili - Made enough for two days, but didn't have any freezer containers, so we fed another family. Thanks for taking it off our hands! Oh yeah, and it was pretty much fat free. The thing about making things from scratch: so much healthier!

Tuesday: Chicken noodle soup - learned how to make my own chicken stock! It was so yummy, although not even close to being fat free... Although very low sodium.

Wednesday: leftover night

Thursday: Broccoli quiche

Friday: Tuna macaroni salad


Anybody want to join the challenge?

Here's the deal: $10 per person per week, and we add about $50 of food storage a couple times a year. The LDS food cannery sells 25 pound bags of wheat for $5.80 or $6.35. So I've started making my own fat free whole wheat bread that tastes great and stays soft for a few days. And totally cuts the cost of lunch time.

Even if you don't want to join, any ideas for some fabulous and low cost meals? I'm getting lots if you'd like some :)

Is this just $40 for dinner or for all three meals a day?

Anyway, would I have to use $30 because we're a family of 3?

I bet if I stayed home and cooked I could do it... maybe...

A cheap easy fav at our house:

Frozen chicken breasts in crock pot
Can of Cream of Chicken Soup
8 OZ of salsa

Cook on low for 6-8 hrs and serve over rice with shredded cheese on top.

All three meals and snacks, Kelly! I don't think you have to stay home to cook to do it, either. Just pick an afternoon, like Sunday, to plan your meals. That's what takes the longest.

When we had 3 kids, my grocery budget was $75 for every 2 weeks. It honestly wasn't that bad...but I'm not going back....unless I have to. Really, at the time, I had a baby and 2 toddlers in my cart whenever I went grocery shopping, so I couldn't fit much in the cart anyhow.

Awesome! This post is so ironic because I was just commenting to my sister earlier this week that Greg and I used to eat for a $160 a month during our college days. I was saying I have no idea how I did it. And our two kids are such picky eaters, I would think it's still possible :). Anyway, I don't think I could do it for that much just because Greg is a meat-a-holic, but I'm definitely trying to cut back. I've planned 6 weeks at a time, shop for 4 and have most of the meat pre-cooked. It's been nice, but every once in awhile I have to change it up due to our schedules.

Anyway, I would LOVE ideas for some cheap, easy meals, so please keep the posts coming!
